Simple Pan Roasted Garlic Shrimp

Light Shrimp Recipe

I have to confess that this is a favorite of mine and my mom’s. We have this tradition of eating a few times while we are at the beach and one night I offer to cook this dish I have kind of made a tradition that we eat this meal while at the beach because of the obvious reason that you can get fresh shrimp and large at that. If possible I would highly recommend getting them deveined.

This group of ladies includes my grandmother on my mom’s side, my mom’s sister, my mom, and myself. We always have a great time on our trip and my mom and I have this tradition of eating this shrimp dish while we are at the beach. if there is a night that it’s raining or we just want to stay in on that particular night, We fix the Pan Roasted Garlic Shrimp. This dish is prepared with red pepper flakes.

This means depending on who you are fixing this dish for, you may want to adjust the amount of the red pepper flakes. Knowing that my mom isn’t crazy about really hot flavor, my grandmother and aunt have problems with heartburn so, you can cut your way down on the red pepper flakes or, leave them out altogether. Whether you have a large group of people or just a few, be sure to ask them if they are allergic to shrimp.

It’s not a crime to make this with frozen shrimp if you aren’t at the beach where you can purchase fresh shrimp. The flavors that make up this wonderful shrimp dish are made up of things such as white cooking wine, olive oil, parsley, and garlic.

This is a very easy dish that will make your guests think that they have been served by a professional chef. I hope you and your guests enjoy it. This is kind of a meal in and of itself but, it would be great served with some garlic mashed potatoes, macaroni and cheese, and a big loaf of garlic bread.

**Don’t forget to make sure that no one that you will be serving has a shrimp allergy and might have a reaction if they come in contact with the shrimp.

Yields: 3-4 Servings

Ingredients

  • 1 lb. medium or large shrimp
  • 1/2 cup olive oil
  • 3 cloves garlic
  • 1/4 cup white cooking wine
  • 2 tablespoons parsley
  • 1 package angel hair pasta, prepared according to packaged directions
  • pinch red pepper flakes, if desired
  • loaf of large french bread

Instructions

Heat the oil. Add garlic and cook for about two minutes, stirring vigorously. Add shrimp and cook quickly turning the shrimp only once until the shrimp are light pink. Add cooking wine and cook three minutes longer. Cook angel hair pasta according to package directions. Remove the pasta, drain the water, and place it on a platter. Pour shrimp and liquid over the pasta. Serve with hot french bread if desired.
