Vegan Chocolate Avocado Pudding

Welcome to my kitchen where I spend a lot of my time creating recipes that will be enjoyable for others. I love cooking for people and I always attempt to make things I feel they may like. Yes, I do make a lot of comfort food but I try to eat differently. I eat vegan ( about 80% of the time). I do have my cheat meals, but I try to stick to my vegan plan for the most part. Vegan, for me, has been the only lifestyle that has had the healthiest results for me. I do have pizza once a week, but if I stick to my plan I don’t need to feel guilty.

Sometimes this is difficult when I am in a group setting and food is involved. Many people do not think it is a big deal to just eat whatever I want during these occasions but when you are doing it several times a week, well, that does affect me. Blood work doesn’t lie, unfortunately. I am not here to convince anyone my way is the way for you, but I am here to say that if you do eat vegan you don’t have to give up everything. Some things, yes. Ok, you give up a lot. But you can enjoy many things and now you can add this yummy dessert to your list!

A big challenge for me is every Friday. My husband and I have bible study at our house and I make desserts for everyone. I try to have a little assortment so there is something for everyone. However, I usually cannot eat any of it. No animal protein for me. No oil. No sugar. My list of things I can eat is getting smaller and smaller. I can only eat cut-up apples so many days in a row. Not to mention how hard it is to watch everyone else eating all the goodies that are laid out.

Well, now I can eat right along with them. Enjoy this recipe!

Ingredients

  • 2 medium avocados
  • 2 tablespoons 100% pure pureed canned pumpkin
  • 1/3 cup brown rice syrup, you can with sub %100 pure maple syrup
  • 1 1/2 cup almond milk, you can sub with other non-dairy milk
  • 2 tablespoons caramel extract, you can sub with vanilla or other flavors you like
  • 1/2 cup cocoa powder
  • garnish (strawberries, bananas), any berries you like
  • 3 dates soaked in water

Instructions

  1. Blend all ingredients in a food processor until smooth
  2. Chill in refrigerator
