Chicken Divan with Broccoli

We all know that the word ‘divan’ means couch or a seat. In France, it also refers to a meeting place. One day, my husband and I decided to try this French recipe – Chicken Divan. It was made popular in the ’50s by a defunct restaurant called Divan Parisienne located in New York City. The place no longer exists but the recipe lives on.

Ingredients:

  • 2pcs. Chicken breasts
  • 1 cup Broccoli florets
  • 1 cup small Carrots
  • 1 cup shredded Cheddar cheese
  • 1 can Cream of Broccoli – Campbell’s
  • 1/2 cup of milk
  • ½ stick of butter
  • ½ cup of crushed oatmeal
  • ¼ cup of crushed nuts – almonds
  • ¼ cup of Soy Sauce
  • 1 Tablespoon of Lemon juice

Procedures:

1. Mix the soy sauce and lemon juice together in a container with a lid.

2. Dip the chicken breasts in the mixture and cover. Let it marinate in the refrigerator for at least 30 minutes.

3. Wash the broccoli then set it aside. Wash the carrots then bring to a boil until tender.

4. When carrots are cooked and soft, drain.

5. In a casserole dish, mix and spread over the dish both broccoli and carrots. Set aside.

6. Cook the chicken breasts for 7 minutes per side. Make sure to use the marinade of soy sauce and lemon juice.

7. When the chicken is cooked, cut it into cubes or bite-sized pieces.

8. Spread the chicken on top of the broccoli and carrot mix.

9. Mix the milk and the Campbell’s cream of broccoli then, pour evenly on top of the chicken. Set aside.

10.Melt the butter. When melted, mix the crushed oatmeal and nuts. Then, spread evenly over the cream of broccoli.

11.Spread evenly the cheddar cheese over the melted butter with oatmeal and nuts.

12.Bake at 450F for 15 minutes.

This makes 4 hefty servings. Total preparation and cooking time, which includes looking at the recipe is an hour. Actually, it will be less than an hour. I just move slowly 🙂 “Bon Appetit !”
